Segmented cast iron grids not only produce the attractive branding marks that customers look for but also conducts heat quicker than steel, resulting in quicker response times to changes in temperature, which as a result increases your cooking output. The recognisable chargrilled flavour is produced through controlled flaring whilst a water bath provides humidity to your meat, reducing shrinkage and keeping the meat succulent and tender for the customer.
